St. Louis Style Pork Steaks

Pork steaks are an economical and delicious option for dinner. This is a famous recipe from St Louis area that takes them to the next level. It is a three step cooking process that will take some time so plan ahead. I also brined these first to make sure they are juicy and full of flavor.

St Louis Style Pork Steaks
Ingredients
- Pork Shoulder Steaks one per person
- Pork Brine
- Low Salt BBQ rub or Cracked Black Pepper to taste
- BBQ Sauce to taste
- Beer 1 can per 2 steaks
Instructions
- Brine the Pork Steaks overnight
- Set up your grill (charcoal and wood chunks is best for this) and shoot for ~300 degrees F.
- Season the Pork Steaks generously with a low salt pork rub or black pepper – they will have absorbed salt already in the brine.
- Smoke or grill for ~45 minutes until they start getting some good color and just a bit of char.
- Remove to a pan, paint generously with your favorite BBQ sauce, and pour a beer or two into the pan. Optionally, you can also sprinkle generously with some good hot sauce.
- Cover the pan with foil and place the pan back on the grill to braise for an hour – go 1.5 hours if they’re not tender enough yet.
- Carefully remove the steaks from the braising liquid and put them back on the grill to dry off.
- Flip the steaks every 3 minutes, painting with a little sauce on every flip. Your goal is to caramelize the sauce.
- Serve with traditional BBQ sides such as mac & cheese or baked beans.
