Brine the Pork Steaks overnight Set up your grill (charcoal and wood chunks is best for this) and shoot for ~300 degrees F.
Season the Pork Steaks generously with a low salt pork rub or black pepper – they will have absorbed salt already in the brine.
Smoke or grill for ~45 minutes until they start getting some good color and just a bit of char.
Remove to a pan, paint generously with your favorite BBQ sauce, and pour a beer or two into the pan. Optionally, you can also sprinkle generously with some good hot sauce.
Cover the pan with foil and place the pan back on the grill to braise for an hour – go 1.5 hours if they’re not tender enough yet.
Carefully remove the steaks from the braising liquid and put them back on the grill to dry off.
Flip the steaks every 3 minutes, painting with a little sauce on every flip. Your goal is to caramelize the sauce.
Serve with traditional BBQ sides such as mac & cheese or baked beans.
