Dutch Oven Cowboy Stew

This recipe will feed a hungry crew, and is easy to make with several canned ingredients.

Dutch Oven Cowboy Stew
Ingredients
- 1 lb. ground beef
- 1 onion
- 3 medium potatoes we use a quart of home canned potatoes
- 1 can kidney beans all cans are about 15 oz.
- 1 can black beans
- 1 can sweet corn
- 2 cans Rotel tomatoes
- 2-4 Tbsp Taco seasoning
Instructions
- Preheat the dutch oven with 24 briquettes underneath.
- Cut potatoes into ½” slices.
- Chop the onion.
- Brown the beef and onion in a little oil.
- Add the potatoes and all of the cans with liquid.
- Add spices (more or less as you like)
- Move 8 coals to the lid
- Cook until the potatoes are soft (about 45 minutes), stirring every 5-10 minutes
- Serve with a crusty bread and hot sauce
