Dutch Oven Cowboy Stew

Ingredients
  

  • 1 lb. ground beef
  • 1 onion
  • 3 medium potatoes we use a quart of home canned potatoes
  • 1 can kidney beans all cans are about 15 oz.
  • 1 can black beans
  • 1 can sweet corn
  • 2 cans Rotel tomatoes
  • 2-4 Tbsp Taco seasoning

Instructions
 

  • Preheat the dutch oven with 24 briquettes underneath.
  • Cut potatoes into ½” slices.
  • Chop the onion.
  • Brown the beef and onion in a little oil.
  • Add the potatoes and all of the cans with liquid.
  • Add spices (more or less as you like)
  • Move 8 coals to the lid
  • Cook until the potatoes are soft (about 45 minutes), stirring every 5-10 minutes
  • Serve with a crusty bread and hot sauce
