Salmon Patties

It seems odd, but I never had these until I moved to Iowa. The local cafe’ would have them for a lunch special and I found they were really delicious. They are also very easy to make, don’t let the long ingredient list scare you off.

Ingredients
  

  • 1 ~15 oz can salmon
  • 1/4 cup of plain Greek yogurt or mayo
  • 3-4 chopped green onions or 2 tsp onion powder
  • 1-2 cloves chopped garlic or 1-2 tsp garlic powder
  • 1 cup good bread crumbs
  • 2 eggs beaten
  • 2 tsp lemon juice
  • 2 tsp salt
  • ½ tsp ground pepper
  • 1 tsp paprika
  • 1 tsp dried dill weed
  • 1 tablespoon dried parsley
  • Vegetable Oil

Instructions
 

  • Drain the salmon and put into a bowl.
  • Add the yogurt or mayo.
  • Mince the onion and garlic and add to the bowl.
  • Add the bread crumbs and the rest of the ingredients (except for the oil)
  • Mix until you have a uniform mixture.
  • Preheat a skillet with ~1/4 inch of oil in the bottom.
  • Scoop balls of the mix with a 1/3 cup measure for portion size and then pat them into ½” thick patties.
  • Place in the skillet and brown the patties for about 4 minutes per side.
  • Serve hot with a good tartar or tzatziki sauce. Green beans or cole slaw are good vegetable sides with these.
