Ground Beef with Ravioli

While Italian sounding, this recipe is actually more Greek in flavor. This recipe is not only delicious, but it come together quickly for an easy week night meal.
My wife saw this and asked me to make it for her. The recipe came from Beef – It’s What’s for Dinner! website, and I made some tweaks for added flavor.

Ground Beef and Ravioli
Ground Beef & Ravioli served with Tzatziki sauce
Ingredients
- 1 pound Ground Beef
- 3 cups or 12 oz of frozen Cheese Ravioli
- 2 14.5 oz cans of diced tomatoes
- 2 tsp dried basil
- 1 tsp dried oregano
- 1 tsp garlic powder or 2 cloves garlic, minced
- 2 cups tightly packed fresh spinach
- ½ cup pitted black or Kalamata olives
- ½ cup crumbled feta cheese
Tzatziki Sauce (optional)
- ½ cup plain Greek yogurt
- ½ cup finely chopped and drained cucumber
- 2 tsp olive oil
- 1 tsp lemon juice
- ½ tsp dill weed
- ½ tsp garlic powder
- Pinch of salt
- Pinch of course black pepper
Instructions
- Cook the ravioli according to the package directions and then drain
- While the ravioli cooks, preheat a large skillet over medium heat and then brown your ground beef in the skillet
- Stir in the canned tomatoes and seasonings; bring to a boil and then reduce to a simmer and cook uncovered for ~10 minutes
- Add the ravioli and simmer for 3 more minutes
- Add the spinach and olives, and simmer until the spinach wilts
- Top with the feta cheese and serve
- Optional, you can top your servings with 1-2 Tbsp of the Tzatziki sauce
