Ground Beef and Ravioli
Ground Beef & Ravioli served with Tzatziki sauce

- 1 pound Ground Beef
- 3 cups or 12 oz of frozen Cheese Ravioli
- 2 14.5 oz cans of diced tomatoes
- 2 tsp dried basil
- 1 tsp dried oregano
- 1 tsp garlic powder or 2 cloves garlic, minced
- 2 cups tightly packed fresh spinach
- ½ cup pitted black or Kalamata olives
- ½ cup crumbled feta cheese
Tzatziki Sauce (optional)
- ½ cup plain Greek yogurt
- ½ cup finely chopped and drained cucumber
- 2 tsp olive oil
- 1 tsp lemon juice
- ½ tsp dill weed
- ½ tsp garlic powder
- Pinch of salt
- Pinch of course black pepper
Cook the ravioli according to the package directions and then drain
While the ravioli cooks, preheat a large skillet over medium heat and then brown your ground beef in the skillet
Stir in the canned tomatoes and seasonings; bring to a boil and then reduce to a simmer and cook uncovered for ~10 minutes
Add the ravioli and simmer for 3 more minutes
Add the spinach and olives, and simmer until the spinach wilts
Top with the feta cheese and serve
Optional, you can top your servings with 1-2 Tbsp of the Tzatziki sauce
