Baked Apple Fritters


I love Apple Fritters. I live in the Midwest, so anytime I stop at Casey’s or Kwik Trip, it’s an Apple Fritter for me. I wanted to try making them at home, but I didn’t want to mess with deep frying just a few fritters so I looked for a recipe I could make in the oven. These have excellent flavor, but I’ll continue to work on this recipe to get the texture closer to the fried fritters I love so much.

Baked Apple Fritters
Ingredients
- 1½ cups all purpose flour
- ¾ cup brown sugar
- 2 tsp baking powder
- 2 tsp Cinnamon
- ½ tsp nutmeg
- 6 Tbsp of butter cold and cut into pieces
- ½ Cup whole milk or half & half
- 1 egg
- 1 tsp vanilla extract
- 1 Granny Smith apple chopped
- 1 Cup powdered sugar
- 2 Tbsp whole milk or half & half
- 1 tsp vanilla extract
- pinch cinnamon
Instructions
- Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper for easier clean-up.
- In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, & nutmeg. Cut the butter into the mixture until it resembles coarse crumbs (I use a food processor for this).
- In another large bowl, whisk together the milk, egg, and vanilla extract. Add to the flour mixture to this bowl a ¼ cup at a time and stir until just combined. Then gently stir in the chopped apple.
- Drop ¼ cup portions onto the prepared baking sheet – you should get 8-9.
- Bake for 11-13 minutes, until the bottoms are firm and the center is set.
- While the fritters bake, prepare the glaze by whisking together confectioner’s sugar, milk, and vanilla extract until smooth.
- Remove the fritters to a wire rack on a baking sheet, and turn the oven to broil. The fritters tend to spread when they bake, so you might have to use two wire racks to fit them all.
- Using 1/3 to ½ of the glaze, brush a thin layer over the fritters. Place under the broiler for 2-3 minutes, or until tops start to turn golden and the glaze bubbles.
- Carefully remove the baking sheet to a cooling rack or cutting board.
- Brush the remaining glaze over the warm fritters.
- Allow the glaze to harden and serve.
- These are the best if eaten warm, with a glass of milk or cup of coffee!
