Baked Apple Fritters

Ingredients
  

  • cups all purpose flour
  • ¾ cup brown sugar
  • 2 tsp baking powder
  • 2 tsp Cinnamon
  • ½ tsp nutmeg
  • 6 Tbsp of butter cold and cut into pieces
  • ½ Cup whole milk or half & half
  • 1 egg
  • 1 tsp vanilla extract
  • 1 Granny Smith apple chopped
  • 1 Cup powdered sugar
  • 2 Tbsp whole milk or half & half
  • 1 tsp vanilla extract
  • pinch cinnamon

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper for easier clean-up.
  • In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, & nutmeg. Cut the butter into the mixture until it resembles coarse crumbs (I use a food processor for this).
  • In another large bowl, whisk together the milk, egg, and vanilla extract. Add to the flour mixture to this bowl a ¼ cup at a time and stir until just combined. Then gently stir in the chopped apple.
  • Drop ¼ cup portions onto the prepared baking sheet – you should get 8-9.
  • Bake for 11-13 minutes, until the bottoms are firm and the center is set.
  • While the fritters bake, prepare the glaze by whisking together confectioner's sugar, milk, and vanilla extract until smooth.
  • Remove the fritters to a wire rack on a baking sheet, and turn the oven to broil. The fritters tend to spread when they bake, so you might have to use two wire racks to fit them all.
  • Using 1/3 to ½ of the glaze, brush a thin layer over the fritters. Place under the broiler for 2-3 minutes, or until tops start to turn golden and the glaze bubbles.
  • Carefully remove the baking sheet to a cooling rack or cutting board.
  • Brush the remaining glaze over the warm fritters.
  • Allow the glaze to harden and serve.
  • These are the best if eaten warm, with a glass of milk or cup of coffee!
