Holiday Dressing (or Stuffing)

Down South, they call this dressing. Up north they call this stuffing. Since I smoke one turkey and deep fry the other turkey, I no longer stuff a bird so we call it dressing.
I like to make it from scratch; the stuff from the box is pretty good but this is definitely better and not that much more work. I like to cook it uncovered in the oven, so that most of the dressing stays moist but the top gets crispy.

Total Time 1 hour 15 minutes

Ingredients
  

  • 4 cups bread cubes
  • 1 cup fine diced onions
  • ½ cup chopped celery
  • ½ cup butter
  • 2 eggs
  • ½ tablespoon parsley
  • 1 teaspoon sage
  • ½ tsp thyme
  • ½ teaspoon rosemary
  • ½ tsp salt
  • ½ tsp Pepper
  • 1 Cup chicken or turkey broth

Instructions
 

  • You can make your own bread cubes out of stale bread. Cut up into cubes and bake in a 300 degree F oven for 15 minutes, stirring once or twice.
  • Sauté the onion and celery in the butter until softened.
  • Combine the onion mixture with the bread and seasonings in a large mixing bowl.
  • Mix the beaten eggs with the broth and stir into the bread mix until well moistened.
  • Bake in a greased shallow casserole at 325° for about 35 to 45 minutes.
