Cabbage Ramen Salad

This is another great way to use up a half a head of cabbage, and it makes a salad that works well for parties and pot lucks. It’s very easy to make just before your company arrives.

Ingredients
  

  • ½ cup slivered almonds
  • ½ cup sesame seeds and/or sunflower seeds
  • ½ head of cabbage coarsely chopped
  • 1 package Ramen Noodles crushed
  • 3-5 green onions chopped
  • ½ cup vegetable oil
  • 3 Tbsp rice or white vinegar
  • 3 Tbsp white sugar
  • 1 Tbsp soy sauce
  • Flavor packet from the Ramen

Instructions
 

  • Put the almonds and sesame seed in a non-stick skillet and heat them on over a medium flame, stirring regularly, until fragrant.
  • Crush the ramen noodles. Combine these with the almonds and sesame seeds and set aside.
  • Toss the cabbage and green onions together in a large bowl.
  • In a small bowl or jar, mix up the dressing ingredients (oil, vinegar, sugar, soy sauce, and flavor packet).
  • Just before serving, pour the dressing over the greens and toss.
  • Add the almonds, sesame seeds, and Ramen noodles and toss again.
