Cinnamon Sugar Coffee Cake

This coffee cake is popular with our kids and it reminds me of cinnamon sweet rolls. It also makes enough to feed a crowd!

Cinnamon Sugar Coffee Cake

Ingredients
  

  • FOR THE TOPPING:
  • 3/4 cups Flour
  • cup Brown Sugar
  • 2 Tablespoons Cinnamon
  • cup Pecans Chopped (optional)
  • sticks Butter cold
  • FOR THE BATTER:
  • 3 cups Flour Sifted
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 3 whole Eggs
  • sticks Butter Softened
  • 2 cups Sugar
  • cup Whole Milk or Half & Half

Instructions
 

  • Preheat the oven to 350 degrees.
  • Grease a 9×13 deep baking dish.
  • In a food processor, combine the topping ingredients until crumbly. Set aside.
  • Sift together the flour, baking powder, and salt.
  • Beat the eggs and set aside.
  • Cream the butter and sugar together.
  • To the butter/sugar mix, add the flour mixture and milk alternately until combined, but don’t over mix it.
  • Fold the beaten eggs into the batter.
  • Spread into the 9×13.
  • Sprinkle half of the crumble topping over the batter.
  • Take a butter knife or chopstick and stir the topping through the batter.
  • Spread the remainder of the topping over the top of the batter.
  • Bake for 40 to 45 minutes, or until firm; check with a toothpick.
  • Serve warm if possible.
