Breakfast Casserole – Slow Cooker

This classic recipe makes it easy to feed a crowd for breakfast all at the same time. For large groups, you could double this recipe. You can also use a combination of breakfast sausage and bacon. You can prepare this the night before and cook this in a slow cooker or in the oven.

Ingredients
- 1# of breakfast meat – breakfast sausage, bacon and/or ham
- ½ onion, diced
- 1-2 bell peppers, diced
- 1# of hash browns
- 1.5 cups shredded cheese – I like cheddar or Colby-Jack but you can try others too
- 12 eggs
- 3/4 cup milk
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Brown and crumble the breakfast meat in a lightly oiled skillet.
- Saute the onion and the peppers in the drippings from the meat.
- You can also brown the hash browns in the skillet for added flavor.
- Spray the inside of the slow cooker or casserole dish with non-stick spray.
- Layer the hash browns, meat, onions and peppers, and cheese in the slow cooker or casserole dish.
- Mix the eggs, milk, salt and pepper and pour into the slow cooker.
- Cook for 8 hours on low or 4 hours on high.
- Or, cook in a 375 degree oven for 40 minutes.
