Brown and crumble the breakfast meat in a lightly oiled skillet.
Saute the onion and the peppers in the drippings from the meat.
You can also brown the hash browns in the skillet for added flavor.
Spray the inside of the slow cooker or casserole dish with non-stick spray.
Layer the hash browns, meat, onions and peppers, and cheese in the slow cooker or casserole dish.
Mix the eggs, milk, salt and pepper and pour into the slow cooker.
Cook for 8 hours on low or 4 hours on high.
Or, cook in a 375 degree oven for 40 minutes.
