Italian Pasta with Sausage

This is a tasty and filling meal. It can be prepared in your cast iron skillet, but it’s not quite a 1 pan dish since you need to cook the pasta separately. This goes great with some wine and a nice fresh salad.

Italian Pasta with Sausage

Ingredients
  

  • 1 # box of Penne pasta
  • 1 # Italian Sausage sliced on the bias
  • 1 green bell pepper cut into bite size pieces
  • 1 red bell pepper cut into bite size pieces
  • ½ white onion cut into bite size pieces
  • 4 cloves minced garlic
  • 1/2 c. extra virgin olive oil
  • 1 large jar of pasta sauce
  • Salt and pepper to taste

Instructions
 

  • Bring well salted water to a boil, add the pasta and cook to al dente; drain.
  • While the pasta is boiling, heat oil in a skillet and sauté the sliced sausages, over medium heat until browned. Keep turning and stirring to prevent burning. Don’t overcrowd the pan; you may have to do it multiple batches.
  • When the sausages are done, cook the onions and the peppers. Add the garlic when the onions are about done.
  • Add the sausage and the pasta sauce to the skillet and simmer.
  • When the pasta is firmly al dente add that to the sauce too.
  • Simmer for another 10 minutes until heated through.
