Camp Fire Tacos

This is a fairly quick and easy dish to prepare and it’s a delicious meal at your campsite. Cooking over the fire adds more flavor and adds to the eating experience.
You can vary the meat, the veggies, and the condiments for different flavors. I have made these tacos with pork chops and rib eye steaks, but I think chicken breast or boneless thighs could also work good.

Ingredients
- 1/2# per person, steak, pork, or chicken
- Seasoning of your choice
- Green pepper – bell, poblano, or Anaheim
- White Onion
- Roma Tomatoes
- Small soft tortillas
- Hot sauce
- Limes, or lime juice
- Fresh or dried cilantro
Instructions
- Slice the pepper and onion thinly, and then season them lightly
- Cut the tomato into small cubes and set aside in a bowl
- Season your meat and cook over the fire.
- Heat a cast iron skillet, add some oil and cook the sliced peppers and onions. Don’t let them overcook.
- Remove the meat when it’s browned on the outside but rare on the inside. Slice the meat thinly and then add to the skillet to finish cooking.
- When the meat is finished, place the skillet on the table along with the tortillas, tomatoes, hot sauce and cut limes or lime juice.
- Assemble your tacos, and enjoy!
