Skillet Scramble

Whether for breakfast or for dinner, this is an easy one dish meal that is delicious and satisfying. The amounts are for one person, but you can just scale this up for more people.

Ingredients
  

  • Olive oil
  • Meat options:
  • 2 sausage links
  • and/or 4 slices of bacon
  • and/or 1/2# of breakfast sausage
  • 1/2 onion chopped
  • 1/2 bell pepper chopped
  • 2 Roma tomatos in bite sized chunks
  • 4-6 eggs scrambled
  • Seasoning of your choice – I like Creole

Instructions
 

  • Preheat the skillet, and then add 1-2 Tbsp of oil
  • Add the meat and stir it through the oil – let it sit for a while to brown, you don’t want to be constantly moving it like a stir fry.
  • When the meat is browned on one side, stir it around and flip each piece to brown on the other side.
  • Add the onion and pepper and stir through. Cook until soft.
  • Add the tomato, and then pour the scrambled eggs over the top.
  • Let is cook for a while, and then give it a stir. Cook until the eggs are done.
  • Season and serve.
