Skillet Scramble

Ingredients
  

  • Olive oil
  • Meat options:
  • 2 sausage links
  • and/or 4 slices of bacon
  • and/or 1/2# of breakfast sausage
  • 1/2 onion chopped
  • 1/2 bell pepper chopped
  • 2 Roma tomatos in bite sized chunks
  • 4-6 eggs scrambled
  • Seasoning of your choice - I like Creole

Instructions
 

  • Preheat the skillet, and then add 1-2 Tbsp of oil
  • Add the meat and stir it through the oil - let it sit for a while to brown, you don't want to be constantly moving it like a stir fry.
  • When the meat is browned on one side, stir it around and flip each piece to brown on the other side.
  • Add the onion and pepper and stir through. Cook until soft.
  • Add the tomato, and then pour the scrambled eggs over the top.
  • Let is cook for a while, and then give it a stir. Cook until the eggs are done.
  • Season and serve.
