Sue has made several of these; they are all delicious and very easy to make.
I’ll provide a common recipe here, but you can change the protein, the vegetables, or the marinade for different flavor combinations.

Ingredients
- Marinade
- 1/2 cup soy sauce
- 1/2 cup orange juice or honey
- 1/3 cup brown sugar
- 2 cloves minced garlic
- 1 Tbsp Rice or White Vinegar
- 1 Tbsp of Vegetable Oil
- 1 Tsp Sesame Oil
- 1 Tsp Dried Ginger
- Other Ingredients
- 1.5 – 2# of boneless chicken thighs or breasts
- 1 cup baby carrots (sweet potato also tastes great!)
- 1 head of cauliflower and/or broccoli, cut into bite sized pieces
- salt & pepper to taste
Instructions
- Place the marinade in a large zip-lock bag and add the chicken and vegetables. Marinade for at least 2 hours but preferably over night.
- Cover a rimmed baking sheet with aluminum foil and spray with non-stick spray
- Spread the chicken and carrots out on the pan and sprinkle with salt and pepper.
- Bake for 25 minutes, then remove.
- Add the cauliflower and/or broccoli, season and bake for another 20 minutes or until the chicken is done.
