Sue’s Sheet Pan Meals

Sue has made several of these; they are all delicious and very easy to make.
I’ll provide a common recipe here, but you can change the protein, the vegetables, or the marinade for different flavor combinations.

Sue’s Sheet Pan Meals

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour

Ingredients
  

  • Marinade
  • 1/2 cup soy sauce
  • 1/2 cup orange juice or honey
  • 1/3 cup brown sugar
  • 2 cloves minced garlic
  • 1 Tbsp Rice or White Vinegar
  • 1 Tbsp of Vegetable Oil
  • 1 Tsp Sesame Oil
  • 1 Tsp Dried Ginger
  • Other Ingredients
  • 1.5 – 2 # of boneless chicken thighs or breasts
  • 1 cup baby carrots sweet potato also tastes great!
  • 1 head of cauliflower and/or broccoli cut into bite sized pieces
  • salt & pepper to taste

Instructions
 

  • Place the marinade in a large zip-lock bag and add the chicken and vegetables. Marinade for at least 2 hours but preferably over night.
  • Cover a rimmed baking sheet with aluminum foil and spray with non-stick spray
  • Spread the chicken and carrots out on the pan and sprinkle with salt and pepper.
  • Bake for 25 minutes, then remove.
  • Add the cauliflower and/or broccoli, season and bake for another 20 minutes or until the chicken is done.
