Stuffed Pepper Casserole

The traditional flavors of a stuffed pepper, in an easy to make casserole. This colorful dish will become a family favorite.

Stuffed Pepper Casserole
Ingredients
- Olive Oil
- 1 1/2 # Ground Beef
- 1 yellow onion diced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 3 cloves garlic minced
- 1 Tbsp Italian Seasoning
- 1 tsp salt
- ½ tsp black pepper
- ½ Tbsp Worcestershire Sauce
- 14-16 ounces diced tomatoes with liquid canned or fresh
- 1 ½ cups of beef broth
- 1 cup long grain white rice
- 1 ½ cups of shredded cheese
- Parsley for garnish
Instructions
- Preheat the oven to 350 degrees F.
- Preheat a large skillet over medium heat on the stove.
- When hot, add 2 Tbsp of olive oil and then brown the ground beef. Break it up while cooking.
- Add the chopped onion and bell peppers and sauté until soft.
- Add the garlic, seasonings, Worcestershire Sauce, and cook until fragrant.
- Add the diced tomatoes and stir through.
- Add the beef broth and rice and stir through, bring to a boil.
- Once it boils, cover and slip into the oven for 20-25 minutes.
- Check if the rice is soft, if not you can add a ½ cup of hot water and cook another 5-10 minutes.
- Remove from the oven and sprinkle with cheese.
- Return to the oven and broil for 3-5 minutes.
- Garnish with parsley and serve!
