Stuffed Pepper Casserole

Ingredients
  

  • Olive Oil
  • 1 1/2 # Ground Beef
  • 1 yellow onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 Tbsp Italian Seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ Tbsp Worcestershire Sauce
  • 14-16 ounces diced tomatoes with liquid canned or fresh
  • 1 ½ cups of beef broth
  • 1 cup long grain white rice
  • 1 ½ cups of shredded cheese
  • Parsley for garnish

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Preheat a large skillet over medium heat on the stove.
  • When hot, add 2 Tbsp of olive oil and then brown the ground beef. Break it up while cooking.
  • Add the chopped onion and bell peppers and sauté until soft.
  • Add the garlic, seasonings, Worcestershire Sauce, and cook until fragrant.
  • Add the diced tomatoes and stir through.
  • Add the beef broth and rice and stir through, bring to a boil.
  • Once it boils, cover and slip into the oven for 20-25 minutes.
  • Check if the rice is soft, if not you can add a ½ cup of hot water and cook another 5-10 minutes.
  • Remove from the oven and sprinkle with cheese.
  • Return to the oven and broil for 3-5 minutes.
  • Garnish with parsley and serve!
