Strawberry Shortcakes

A classic dessert, especially during the summer shortcake season. I like to use a mix of blueberries and strawberries for an annual 4th of July dessert.
Ingredients
- 6 Shortcakes, purchased or make your own
- 4 cups sliced strawberries (and/or other fruit)
- ¼ cup sugar
- ¼ tsp vanilla extract
- Whipped topping
Instructions
- Slice the strawberries (and/or other fruit) and combine with the sugar and vanilla.
- Let this sit in the fridge for at least 20 minutes and preferably for 4 hours to chill and to allow the sugar to juice the fruit.
- Slice the shortcakes into two.
- Place the bottom slice into a bowl, top with some fruit and some whipped topping.
- Add the top slice and add more fruit and whipped topping.
