These appetizers are easy to make and very full of flavor. The roast beef is important here, you need a more robust meat to not get covered up by the seasonings. These are easy to make, and other than some wait time they come together in a hurry.

Ingredients
- 1 8 oz package cream cheese, softened
- 2 tablespoons sour cream
- 2 tablespoons mayonnaise
- 4 oz chopped chilies, drained
- 1 Tbsp Chili Powder
- 1 Tbsp Paprika
- 1 Tbsp Cilantro
- 1 Tbsp Oregeno
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Cumin
- 1 tsp Salt
- 15-20 8” Tortillas
- 3 Cups Shredded Co-Jack or Mexican cheese
- 3 packages dried beef
Instructions
- Set the cream cheese out on the counter the night before to allow it to soften.
- Thoroughly mix the first 12 ingredients in a bowl.
- Spread the cream cheese mix on the tortillas, sprinkle with shredded cheese and lay dried beef over that to cover most of the tortilla.
- Roll up the tortillas tightly, and lay them seam side down on a plate or in a container and put them in the refrigerator for 3 hours to set.
- Slice the rolled-up tortillas into 2 inch pieces and secure with toothpicks if needed.
