Southwest Rollups

Ingredients
  

  • 1 8 oz package cream cheese softened
  • 2 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 4 oz chopped chilies drained
  • 1 Tbsp Chili Powder
  • 1 Tbsp Paprika
  • 1 Tbsp Cilantro
  • 1 Tbsp Oregeno
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 15-20 8 ” Tortillas
  • 3 Cups Shredded Co-Jack or Mexican cheese
  • 3 packages dried beef

Instructions
 

  • Set the cream cheese out on the counter the night before to allow it to soften.
  • Thoroughly mix the first 12 ingredients in a bowl.
  • Spread the cream cheese mix on the tortillas, sprinkle with shredded cheese and lay dried beef over that to cover most of the tortilla.
  • Roll up the tortillas tightly, and lay them seam side down on a plate or in a container and put them in the refrigerator for 3 hours to set.
  • Slice the rolled-up tortillas into 2 inch pieces and secure with toothpicks if needed.
