Sausage & Cabbage Skillet

This is a another great combination of sausage and cabbage. I prefer sliced sausage for this recipe, and it’s very quick and easy to make.
Ingredients
- 1# smoked sausage, sliced on the bias
- 3 tablespoons butter
- ½ head medium cabbage (or 1 small head) chopped
- ½ onion, chopped
- 2 chopped tomatoes, or one 15 ounce can of diced tomatoes
- 1 tsp Creole spice, or to taste
Instructions
- In a large skillet, brown the sausage and then remove and set aside.
- Melt the butter and then cook the cabbage and onion until wilted.
- Add back the sausage and the remaining ingredients.
- Cover and cook for 10 minutes.
- Uncover and cook until most of the liquid has been reduced.
