Sausage & Cabbage Skillet

Ingredients
  

  • 1 # smoked sausage sliced on the bias
  • 3 tablespoons butter
  • ½ head medium cabbage or 1 small head chopped
  • ½ onion chopped
  • 2 chopped tomatoes or one 15 ounce can of diced tomatoes
  • 1 tsp Creole spice or to taste

Instructions
 

  • In a large skillet, brown the sausage and then remove and set aside.
  • Melt the butter and then cook the cabbage and onion until wilted.
  • Add back the sausage and the remaining ingredients.
  • Cover and cook for 10 minutes.
  • Uncover and cook until most of the liquid has been reduced.
