Quesadillas are probably easier to make than to describe. This is our go to meal for busy days – cheesy, gooey, tasty and speedy!
These can be as simple or complex as you like – from just melted cheese on a tortilla to veggies and meat.

Ingredients
- Tortillas
- Sour Cream
- Seasonings (we like garlic powder, cumin and cilantro)
- Shredded cheese (Co-Jack works great)
- Veggies (green peppers, onions, mushrooms, olives, etc)
- Meat (browned taco meat, browned Italian sausage, cooked bacon, pepperoni, etc)
Instructions
- Spread sour cream on each of the tortillas.
- Flavor with your favorite seasonings.
- Sprinkle generously with shredded cheese.
- Add the veggies and meat of your choice, to one half of the tortilla.
- Preheat a non-stick skillet over medium heat.
- We like to use two skillets, one to cook them on and one on low to keep the finished ones warm.
- Place the open tortilla on the skillet.
- When the cheese begins to melt, take a spatula and fold the tortilla in half over itself.
- They are ready when the tortilla is browned and the cheese is melted.
