Potato Cauliflower Mash Ingredients

This is a delicious and easy alternative to mashed potatoes, with less starch and additional flavor. Mashing potatoes and vegetables together is an old Dutch custom, but that is usually done with cabbage, kales, carrots, or green beans. This brings a new twist to an old classic.

Notes
Potato Cauliflower Mash, with Grilled Pork Tenderloin and a Chimichurri sauce.
Ingredients
- 1 head of cauliflower
- An equal weight of Russet potatoes
- 2 tsp salt
- 2-3 cloves of garlic, minced
- 4 Tbsp Butter
- Milk if needed
- Seasoning of your choice (I like Cavenders)
Instructions
- Half fill a large saucepan with water and add 2 tsp of salt.
- Peel and quarter the potatoes and put in the water.
- Cut up the head of cauliflower and add to the water. The stem can also be cut up and mashed along with everything else.
- Bring the water to a boil and then simmer for 25 minutes.
- While simmering, mince the garlic.
- Drain the water, and add the garlic and butter.
- Mash the potatoes and cauliflower together. Add some milk to thin if needed.
- Season to taste.
- Garnish with paprika and/or parsley and serve.
