Pico de Gallo

This salsa made with fresh veggie ingredients is healthy and full of flavor. It goes great on chips, or in your favorite Mexican dishes. This is not completely traditional, as I like to add a pint of tomato sauce to help bind it all together.
Ingredients
- 8-10 Roma tomatoes, stems removed, finely diced
- ½ white or red onion, finely diced
- 10 green onions, finely sliced including the greens
- 2 cloves garlic, finely diced
- 1 green pepper – stems and seed removed, finely diced
- 1-2 banana peppers – finely diced
- 1-2 jalapeno peppers – finely diced
- 1 Tbsp dried cilantro (or 3 Tbsp fresh)
- 1-2 Tbsp lime juice
- Pinch of cumin
- Salt to taste
- 12-16 oz can or jar of tomato sauce
Instructions
- Combine and adjust to taste;
- If it’s too hot, add a little sugar
- If it’s too mild, add some black pepper and/or hot sauce
- Adjust the salt and cumin for more flavor
