I like to catch them, filet them, and cook them fresh when I’m camping. This is a simple recipe to make crispy and tasty fried filets.

Ingredients
- 1 package of fish breading, such as Shore Lunch or Zatarains.
- 1-2 tsp Creole Seasoning
- 1-2 tsp dill weed
- Optional – crumbs from tortilla chips
- 1 cup milk
- 1 egg
- 8-10 fish filets
- Oil for frying
Instructions
- Preheat about 1 inch of oil in a cast iron skillet.
- Put the fish breading into a gallon zip lock bag.
- Add the creole seasoning and dill weed.
- If you have some crumbs from a bag of tortilla chips, this can make your fish breading extra crispy.
- Dip the filets into the milk/egg batter and toss in the bag to coat.
- Fry the filets in the oil until golden brown.
- Serve with tartar sauce and a good beer.
