This is the simpler version of this popular Asian dish, otherwise known as Orange Chicken. Sweet, salty and a little spicy, it is often a favorite with kids.

Ingredients
- 1 lb. chicken breasts, cut into bite size pieces
- 1-2 tablespoon cooking oil (I like peanut oil for this)
- 2 tsp ground ginger
- Ground pepper to taste
- 1 7 oz can chopped chilies
- 2 tablespoon soy sauce
- 2 tablespoons of vinegar (I like to use rice vinegar)
- A pinch of sugar (I like to use brown)
- 1 cup or small can of mandarin oranges
- 2-3 cups cooked white rice
Instructions
- Start the water for the rice – add the rice once it is boiling.
- Cut up the chicken, and brown in the oil until no longer pink.
- Stir in the ginger, pepper and chiles – cook for a couple of minutes.
- While the chicken is cooking, combine the soy sauce, vinegar and sugar, and then add this and the oranges to the chicken.
- Simmer for 15 minutes.
- Serve over white rice
