Mandarin Chicken

Ingredients
  

  • 1 lb. chicken breasts cut into bite size pieces
  • 1-2 tablespoon cooking oil I like peanut oil for this
  • 2 tsp ground ginger
  • Ground pepper to taste
  • 1 7 oz can chopped chilies
  • 2 tablespoon soy sauce
  • 2 tablespoons of vinegar I like to use rice vinegar
  • A pinch of sugar I like to use brown
  • 1 cup or small can of mandarin oranges
  • 2-3 cups cooked white rice

Instructions
 

  • Start the water for the rice - add the rice once it is boiling.
  • Cut up the chicken, and brown in the oil until no longer pink.
  • Stir in the ginger, pepper and chiles - cook for a couple of minutes.
  • While the chicken is cooking, combine the soy sauce, vinegar and sugar, and then add this and the oranges to the chicken.
  • Simmer for 15 minutes.
  • Serve over white rice
