Ingredients

lb.
chicken breasts
cut into bite size pieces
1-2
tablespoon
cooking oil
I like peanut oil for this

tsp
ground ginger
Ground pepper to taste
1 7

can chopped chilies

tablespoon
soy sauce
2
tablespoons
of vinegar
I like to use rice vinegar
A pinch of sugar
I like to use brown

cup
or small can of mandarin oranges
2-3
cups
cooked white rice
Instructions
Start the water for the rice - add the rice once it is boiling.
Cut up the chicken, and brown in the oil until no longer pink.
Stir in the ginger, pepper and chiles - cook for a couple of minutes.
While the chicken is cooking, combine the soy sauce, vinegar and sugar, and then add this and the oranges to the chicken.
Simmer for 15 minutes.
Serve over white rice
