Italian Sausage with Sauce & Pasta

This is a quick and easy dish to make for a family of 4. To make it even easier it can be done as a one dish meal in a large electric skillet.
Italian Sausage with Sauce & Pasta

Ingredients
- 1# box of Penne pasta
- 1# Italian Sausage, sliced on the bias
- 1 green bell pepper, cut into bite size pieces
- 1 red bell pepper, cut into bite size pieces
- ½ white onion, cut into bite size pieces
- 4 cloves minced garlic
- 1/2 c. extra virgin olive oil
- 28 oz can of crushed tomatoes (or a quart of home canned tomatoes)
- 1 tsp. parsley
- 1 tsp. oregano
- 1 tsp. basil
- 1 tsp. salt
- 1/2 tsp red pepper flakes
Instructions
- Bring 4 quarts of well salted water to a boil, add the pasta and cook to firm al dente; drain.
- While the pasta is boiling, heat the oil in a skillet or fry pan and sauté the sausages, the sliced peppers and onion over medium heat for 10-15 minutes until browned. Keep turning and stirring to prevent burning. Don’t overcrowd the pan; you may have to do it multiple batches.
- In a large sauce pan, sauté the garlic in olive oil for 5 minutes and then add the tomatoes, seasonings, salt & pepper, bring to a boil and then simmer.
- Once simmering, add the sausage, peppers and onion to the tomato sauce. When the pasta is firmly al dente add that to the sauce too. Simmer for another 5-10 minutes.
- This dish goes great with a tossed salad.
