Bring 4 quarts of well salted water to a boil, add the pasta and cook to firm al dente; drain.
While the pasta is boiling, heat the oil in a skillet or fry pan and sauté the sausages, the sliced peppers and onion over medium heat for 10-15 minutes until browned. Keep turning and stirring to prevent burning. Don’t overcrowd the pan; you may have to do it multiple batches.
In a large sauce pan, sauté the garlic in olive oil for 5 minutes and then add the tomatoes, seasonings, salt & pepper, bring to a boil and then simmer.
Once simmering, add the sausage, peppers and onion to the tomato sauce. When the pasta is firmly al dente add that to the sauce too. Simmer for another 5-10 minutes.
This dish goes great with a tossed salad.
