Italian Cole Slaw

Here’s a bright and delicious salad that comes together quickly. It fits equally well at a summer picnic or a more formal Italian dinner. You can choose red or green cabbage, it’s great either way.

Italian Cole Slaw
Ingredients
- 1 head cabbage (red or green)
- 1/2 onion red or white (contrast with your cabbage)
- 1 carrot slice thin with a peeler
- 1/2 cup olive oil
- 2 Tbsp balsamic vinegar
- 2 Tbsp Lemon juice
- 2 cloves garlic minced fine
- 1 Tbsp dried parsley
- 1 tsp dried basil
- 1/2 tsp dried oregeno
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup Parmesan cheese
Instructions
- Combine the cabbage, onion and carrot, sprinkle with 1 Tbsp of salt and put in a colander to drain.
- Whisk the dressing ingredients together.
- Rinse the onion and cabbage to remove the excess salt and let them drain again.
- Combine the cabbage mix with the dressing and chill for 2-4 hours.
- Stir through and garnish with parsley or chives.
