Italian Cole Slaw

Ingredients
  

  • 1 head cabbage (red or green)
  • 1/2 onion red or white (contrast with your cabbage)
  • 1 carrot slice thin with a peeler
  • 1/2 cup olive oil
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp Lemon juice
  • 2 cloves garlic minced fine
  • 1 Tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregeno
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup Parmesan cheese

Instructions
 

  • Combine the cabbage, onion and carrot, sprinkle with 1 Tbsp of salt and put in a colander to drain.
  • Whisk the dressing ingredients together.
  • Rinse the onion and cabbage to remove the excess salt and let them drain again.
  • Combine the cabbage mix with the dressing and chill for 2-4 hours.
  • Stir through and garnish with parsley or chives.
