Easy Cheesy Queso Dip

This recipe makes a large batch for a party, or you can put the leftover dip in the fridge and then reheat it to melt it again. Or, you can cut this recipe in half.
I’ve tried this with freshly shredded block cheese, but Velveeta style cheese melts and mixes much better.

Ingredients
- 2# of processed cheese (such as Velveeta)
- 2 cups of your favorite salsa, or 1-2 cans of Rotel
- 1 bunch of green onions, sliced – you can reserve some of the sliced greens for a garnish
- Optional: 1# of ground beef, browned and seasoned with Taco Seasoning
- Optional: Hot Sauce to taste
- Optional: 1 cup Jalapeno pepper slices
Instructions
- If using the ground beef, brown that in a skillet and season with 2 Tbsp of Taco Seasoning
- Cube the processed cheese so that it melts easier.
- Put the cheese cubes, the salsa, and the green onions into a slow cooker and cook on low for 3-4 hours. Add the meat when it is browned.
- If you’re in a hurry, you can put all of the ingredients in a bowl and microwave on high for 2 minutes at a time and stirring in-between, until done.
- If you have a smoker, you can also put this in an 9×13 foil pan and cook it in your smoker @ 220-250 degrees for ~2 hours.
- Taste and if needed adjust the heat level with some hot sauce.
- If it’s too thin you can add some cream cheese; if it’s too thick you can thin it with some beer.
