Easy Cheesy Queso Dip

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 2 # of processed cheese such as Velveeta
  • 2 cups of your favorite salsa or 1-2 cans of Rotel
  • 1 bunch of green onions sliced - you can reserve some of the sliced greens for a garnish
  • Optional: 1# of ground beef browned and seasoned with Taco Seasoning
  • Optional: Hot Sauce to taste
  • Optional: 1 cup Jalapeno pepper slices

Instructions

  • If using the ground beef, brown that in a skillet and season with 2 Tbsp of Taco Seasoning
  • Cube the processed cheese so that it melts easier.
  • Put the cheese cubes, the salsa, and the green onions into a slow cooker and cook on low for 3-4 hours. Add the meat when it is browned.
  • If you're in a hurry, you can put all of the ingredients in a bowl and microwave on high for 2 minutes at a time and stirring in-between, until done.
  • If you have a smoker, you can also put this in an 9x13 foil pan and cook it in your smoker @ 220-250 degrees for ~2 hours.
  • Taste and if needed adjust the heat level with some hot sauce.
  • If it's too thin you can add some cream cheese; if it's too thick you can thin it with some beer.
