This is a very quick and easy recipe to make while camping. It’s also low carb, delicious and satisfying. You could experiment with different veggies, meats, or seasonings, but this is the way I like it.

Ingredients
- 2 Tbsp oil
- 1/2# of Andouille Sausage, cut on the bias
- 1/2 white onion, chopped coarsely
- 1/2 green pepper, chopped coarsely
- 1 Roma tomato, chopped
- 3-4 eggs
- Creole Seasoning
- 1/2 cup shredded cheese
- Hot Sauce
Instructions
- Preheat your cast iron skillet
- Slice the sausage on the bias while the skillet preheats
- Add the oil to the skillet and then add the Andouille.
- While the Andouille browns, coarse chop the pepper and onion
- Flip all of the sausage, and then add the pepper and onion to the skillet
- Sprinkle with Creole seasoning
- While the sausage, pepper and onions cook, chop the tomato.
- Add the tomato to the skillet, and then using your spatula make bare spaces in the skillet to crack the eggs into.
- Add the eggs, and sprinkle with more Creole Seasoning.
- Cover the skillet to help the eggs good through.
- When the eggs are done to your liking, sprinkle the cheese over the top and put the lid back on to melt the cheese.
- Serve with hot sauce
