Preheat your cast iron skillet
Slice the sausage on the bias while the skillet preheats
Add the oil to the skillet and then add the Andouille.
While the Andouille browns, coarse chop the pepper and onion
Flip all of the sausage, and then add the pepper and onion to the skillet
Sprinkle with Creole seasoning
While the sausage, pepper and onions cook, chop the tomato.
Add the tomato to the skillet, and then using your spatula make bare spaces in the skillet to crack the eggs into.
Add the eggs, and sprinkle with more Creole Seasoning.
Cover the skillet to help the eggs good through.
When the eggs are done to your liking, sprinkle the cheese over the top and put the lid back on to melt the cheese.
Serve with hot sauce
