Choriqueso Ingredients

This authentic and full flavored dip is a great way to start a Mexican meal. It only requires 4 ingredients and it comes together in just a few minutes. You make it a serve it in a cast iron skillet so all can share.

Ingredients
- 1# of Chorizo
- 1# of Queso Oaxaca
- Onions, chopped
- Green chilies, chopped
- Tortillas or Tortilla Chips
Instructions
- Shred your Oaxaca cheese so that it will melt easier.
- Preheat your skillet over the stove.
- Brown the chorizo in a skillet. You won’t need to add any oil. Once it’s started keep it covered to hold in the moisture.
- Remove about ¼ to 1/3 of the chorizo and set aside.
- Level the chorizo and sprinkle the cheese over the top of the chorizo.
- Cover and let the cheese melt.
- Once the cheese has started melting, sprinkle the remaining chorizo evenly over the top of the cheese.
- Cover and let the cheese melt some more before serving.
- Garnish with chopped onions, and/or green chilies and scoop with tortillas or tortilla chips.
