This is a little brother to the classic breakfast casserole, with a Southwest twist. This works well when camping or for a smaller group.

Ingredients
- 4 slices thick cut bacon
- ½# of smoked link or rope sausage, sliced
- ½# if breakfast sausage
- ½ medium onion, diced
- ½ green or red pepper, diced
- 1# hash browns, or left over baked potatoes, or canned potatoes.
- 2 limes
- 4-6 eggs
- Seasoning of your choice – I like Creole.
Instructions
- Preheat the skillet and apply some non-stick spray.
- Fry the bacon in the skillet until reduced to half.
- Remove the bacon and cut up when cooled.
- Add the smoked sausage to brown in the skillet, and remove when done.
- Add the onion, pepper, and pork sausage, break up and cook until done, then remove.
- Add the hash brown potatoes and stir through the drippings.
- Season the potatoes and cover the pan – cook another ~5 minutes and then stir again.
- Add all of the meats and vegetables, stir it through, level it off, and squeeze a lime over it it all
- Cover and let it cook another 1-2 minutes
- Crack your eggs, evenly spaced over the potatoes. Let them cook for a minute before covering again. Cook covered until the eggs are firm.
- Serve with a wedge of lime and cilantro leaves for garnish.
