Preheat the skillet and apply some non-stick spray.
Fry the bacon in the skillet until reduced to half.
Remove the bacon and cut up when cooled.
Add the smoked sausage to brown in the skillet, and remove when done.
Add the onion, pepper, and pork sausage, break up and cook until done, then remove.
Add the hash brown potatoes and stir through the drippings.
Season the potatoes and cover the pan – cook another ~5 minutes and then stir again.
Add all of the meats and vegetables, stir it through, level it off, and squeeze a lime over it it all
Cover and let it cook another 1-2 minutes
Crack your eggs, evenly spaced over the potatoes. Let them cook for a minute before covering again. Cook covered until the eggs are firm.
Serve with a wedge of lime and cilantro leaves for garnish.
