Breakfast Casserole – Slow Cooker

This classic recipe makes it easy to feed a crowd for breakfast all at the same time. For large groups, you could double this recipe. You can also use a combination of breakfast sausage and bacon. You can prepare this the night before and cook this in a slow cooker or in the oven.

Ingredients
  

  • 1 # of breakfast meat – breakfast sausage bacon and/or ham
  • ½ onion diced
  • 1-2 bell peppers diced
  • 1 # of hash browns
  • 1.5 cups shredded cheese – I like cheddar or Colby-Jack but you can try others too
  • 12 eggs
  • 3/4 cup milk
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Brown and crumble the breakfast meat in a lightly oiled skillet.
  • Saute the onion and the peppers in the drippings from the meat.
  • You can also brown the hash browns in the skillet for added flavor.
  • Spray the inside of the slow cooker or casserole dish with non-stick spray.
  • Layer the hash browns, meat, onions and peppers, and cheese in the slow cooker or casserole dish.
  • Mix the eggs, milk, salt and pepper and pour into the slow cooker.
  • Cook for 8 hours on low or 4 hours on high.
  • Or, cook in a 375 degree oven for 40 minutes.
