Breakfast Burritos

These are great for a camping breakfast since they are an all in one meal and you can eat these while sitting, standing, or walking around.



Breakfast Burritos
Ingredients
- Oil
- 1/2 # of breakfast sausage
- 1/4 onion chopped
- 1/2 green pepper chopped
- 1-2 eggs per person scrambled
- 1 cup of shredded cheese
- Salsa
- Tortillas
Instructions
- Preheat your skillet and add a little oil or cooking spray.
- Add the sausage to skillet and let it brown.
- Add the onion and the green pepper and allow it to cook with the meat.
- Preheat another skillet or griddle for warming the tortillas.
- Add the scrambled eggs to the skillet with the meat and allow it to cook, stirring occasionally.
- Warm the tortillas on the other skillet or griddle, watch them as they can burn quickly.
- Sprinkle the cheese over the sausage and egg skillet.
- Dish up a quarter of the sausage and eggs unto a tortilla and top with some salsa.
