BLT Salad

If you like a BLT sandwich, you’ll love this salad. I developed this recipe one weekend when I was craving BLTs but we only had cherry tomatoes available in the garden.
It is sweet and salty, creamy and crunchy just like the original. The celery, onion, and green pepper provide the crispness that the lettuce adds to a sandwich, with a little more flavor.
This recipe makes 4-6 servings as a side dish, or 2-3 servings as a meal.
Ingredients
- 6-8 strips of cooked bacon
- 2-3 cups of cooked bowties, shells, or macaroni (1.5 cup dry)
- 1.5 cups chunked tomato bite size – grape or cherry tomatoes cut in half work great!
- ¼ cup chopped celery
- ¼ cup chopped green pepper
- ¼ cup chopped onions
- 2-3 tablespoons of softened butter
- ½ – 1 cup of Miracle Whip – just enough to moisten the salad and hold it together.
- Several shakes of hot sauce or cracked black pepper
- Salt to taste
Instructions
- Fry the bacon, or cook it in the oven, until crisp but not burnt.
- Cook the macaroni until soft.
- Chop the vegetables
- Combine all of the ingredients, taste and adjust seasoning.
