Home canned tomato sauce is the base for most of my Italian recipes. It’s simple to make (though it will take some time) is great to have on hand, and tastes so much better than store bought.

You will need to remove the skin and seeds and this can be done one of 3 ways:
1) Dip the whole tomatoes into boiling water for a few seconds and they will peel easily. Then cut the tomatoes in half and squeeze out the seeds.
2) Use a food mill (pictured) to squeeze the raw tomatoes and separate the seeds and skin from the juice.
3) Boil the cut tomatoes first until they soften and then run them through the food mill. This is makes the actual milling process quicker and easier, but adds some time to the total process because you have to allow the tomatoes to cool before milling them.

A 12 quart stock pot full of cut tomatoes will make 7 quarts of sauce.
A food mill will make easy work of turning tomatoes into sauce.
