I love Apple Fritters. I live in the Midwest, so anytime I stop at Casey’s or Kwik Trip, it’s an Apple Fritter for me. I wanted to try making them at home, but I didn’t want to mess with deep frying just a few fritters so I looked for a recipe I could make in the oven. These have excellent flavor, but I’ll continue to work on this recipe to get the texture closer to the fried fritters I love so much.
Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper for easier clean-up.
In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, & nutmeg. Cut the butter into the mixture until it resembles coarse crumbs (I use a food processor for this).
In another large bowl, whisk together the milk, egg, and vanilla extract. Add to the flour mixture to this bowl a ¼ cup at a time and stir until just combined. Then gently stir in the chopped apple.
Drop ¼ cup portions onto the prepared baking sheet – you should get 8-9.
Bake for 11-13 minutes, until the bottoms are firm and the center is set.
While the fritters bake, prepare the glaze by whisking together confectioner’s sugar, milk, and vanilla extract until smooth.
Remove the fritters to a wire rack on a baking sheet, and turn the oven to broil. The fritters tend to spread when they bake, so you might have to use two wire racks to fit them all.
Using 1/3 to ½ of the glaze, brush a thin layer over the fritters. Place under the broiler for 2-3 minutes, or until tops start to turn golden and the glaze bubbles.
Carefully remove the baking sheet to a cooling rack or cutting board.
Brush the remaining glaze over the warm fritters.
Allow the glaze to harden and serve.
These are the best if eaten warm, with a glass of milk or cup of coffee!
