Fried Potatoes

This is a great reason to bake more potatoes than what you need, since baked potatoes make the best fried potatoes.

Ingredients
  

  • 4-6 Baked Potatoes
  • 1/2 Onion chopped coarsely
  • 1/2 Bell Pepper chopped coarsely
  • 1/4 cup oil
  • Seasonings

Instructions
 

  • Cut the baked potatoes into bite size pieces
  • Coarse chop the onion and the pepper – I personally like big chunks
  • Heat the oil in a skillet
  • Add the potatoes first, spread them out but don’t stir them too often – too much stirring prevents them from browning properly and can break them up.
  • Once the potatoes have started to brown, add the onions and the peppers.
  • Season generously with your favorite seasoning blend. I like to use Seasoned Salt & cracked pepper, or Creole Seasoning, or Cavenders.
  • Cook until heated through and the vegetables are soft.
