Ingredients
- 4-6 Baked Potatoes
- 1/2 Onion, chopped coarsely
- 1/2 Bell Pepper, chopped coarsely
- 1/4 cup oil
- Seasonings
Instructions
- Cut the baked potatoes into bite size pieces
- Coarse chop the onion and the pepper – I personally like big chunks
- Heat the oil in a skillet
- Add the potatoes first, spread them out but don’t stir them too often – too much stirring prevents them from browning properly and can break them up.
- Once the potatoes have started to brown, add the onions and the peppers.
- Season generously with your favorite seasoning blend. I like to use Seasoned Salt & cracked pepper, or Creole Seasoning, or Cavenders.
- Cook until heated through and the vegetables are soft.
