Instructions
Cut the baked potatoes into bite size pieces
Coarse chop the onion and the pepper - I personally like big chunks
Heat the oil in a skillet
Add the potatoes first, spread them out but don't stir them too often - too much stirring prevents them from browning properly and can break them up.
Once the potatoes have started to brown, add the onions and the peppers.
Season generously with your favorite seasoning blend. I like to use Seasoned Salt & cracked pepper, or Creole Seasoning, or Cavenders.
Cook until heated through and the vegetables are soft.
